Question:

Should you add baking soda while you soak your beans?

— Janet Batchelder

Answer:

I, this does, uh, it says I've heard this before and I'm not a big fan of adding baking soda to, while you soak your beans. I think just water is fine when you're soaking them. I typically, for any bean, I'm just gonna soak them overnight to be able to do that. They say that baking soda can actually, you know, give them a little more tenderization. We'll get rid of some of the gases. I don't really think that you need to put that step in there. One of the biggest things I do find when people are using baking soda, they're using too much, which is not good for actually doing that. So, um, I typically just use water and that works just fine. Um, you know, people have been making beans for thousands and thousands of years, baking soda's, not something that they essentially put into it. Um, I think the water method works just fine. So yes, you can, uh, just don't put too much in. Um, but waterworks actually just, just fine the same way.
