Should I be using less heat when sautéing as my pan rapidly turns black?

Answer:

Um, yeah, you know, if you are seeing signs of, uh, of overheating, uh, whether it's a, a pan, uh, discoloring in a significant way, um, or, uh, the pan smoking, uh, or the food burning, then definitely turn down the heat. Okay? And, uh, and so cooking in a very fundamental way is about controlling time and temperature. If you think about it, that's what we're doing, right? Whether it's steaming or roasting, or saing or grilling or something else, we're trying to con, uh, control the intensity of the heat and the time, uh, during which, uh, you know, for which we cook the, the food I am. Um, so, uh, you know, play around with this. It's, it's all about developing your experience around the particular ingredients that you use and the particular equipment that you have, or the particular dishes that you make, okay? And, uh, so that's the general, uh, information that I'll, I'll share with you today.
