Question:

Do certain flours work better without oils? I used cassava flour to make the pancakes and it stuck to the pan. Would other flours like brown rice flour do the same? Thank you,

— Heather A. Rennalls

Answer:

So when you become a no oil plant-based person, sometimes, um, it's important to realize that there are some things we just have to do differently. So here's how I make pancakes. I make my batter and I like to use oat flour, and I like to use almond milk because I think they have a little bit more texture to them than other flour. And I follow the directions for making pancakes. And then I take a baking sheet and I line it with a sill pat. And then I have my oven between 3 75 and 400. I put my pancake batter, maybe six pancakes on a baking sheet, and I put it in the oven and I wait for the bubbles to come, and then I take it out of the oven and I flip them and they flip beautifully. So, um, maybe you have a, a favorite pan that you've used for years, but I'm going to tell you that if you bake your pancakes, uh, in the oven, you will be so happy because you'll have a delicious oil free breakfast that will be totally nutrient dense, filled with fiber and lots of micronutrients, and you'll just love it. The other thing people are doing these days is that they're making full sheet pans of pancakes. So in other words, taking all of the batter, putting it on a sill pat lined baking sheet, and not even having to flip it, but actually baking the whole thing. So I hope that that helps. But I'm an oat flower person. I make my own in the Vitamix. And, um, let us know how you make out because I think that pancakes are a wonderful food. Uh, and most families have a rich history with pancakes, and that's always fun too.
