Other than zucchini, pumpkin, carrot and apple, what other vegetables and fruit can be used to bake cakes, muffins and brownies?

Answer:

People are using sweet potatoes quite a lot in cakes and muffins and brownies. Uh, the Japanese sweet potatoes, which are white inside are so sweet that in Asia people actually freeze them and eat them like an ice cream pop. And chef Char told me that she freezes them and puts them through her Jonas machine to make frozen, uh, desserts, which is really great. I'll tell you that. Rip Leston and Jane Anne have put kale in their cake. I don't do that. So any, you know, I I use prunes. I know they're called dried plums now, but I'm Chef Char and I are sticking with prunes and I use, um, prune puree in many of my chocolate desserts. That just adds a, this is something that they've been doing in France for many years. Is adds a wonderful flavor. And don't forget about dates. Dates are very, very sweet.
