How do we make whole food plant-based pastry without oil and without vegan butter?

Answer:

You really can't make a pastry dough as far as I know that's going to roll out and be flaky without oil or vegan butter. But what you can do is make a pie crust that is, has dates and nuts and coconut if you want, or dates and nuts and seeds and blend that up and do what's called a cookie crust. Just pat it into your pan and you won't need any oil or vegan butter.
