When baking oil-free, which do you think is best, safe and most reliable for getting good results: parchment or silicone?

Answer:

And I am a big fan of Parchment. I have a lot. I buy big, big boxes of parchment. They live up there and cut to fit. But I really, um, you know, I know that you're doing oil free baking and here, for example, are some little silicone cupcake tins. Well tins, they're cups. I bought these originally when I was doing a lot of travel teaching. What I do with these, however, is I put a parchment liner inside and it works really, really well. Uh, I like this with the parchment liner better than using plain parchment. I will caution people that if you're making a larger cake, say a bunch cake in a par, in a silicone bunt pan, or a larger cake in a silicone cake pan, the the batter has nothing to climb, nothing to grab onto while it's rising and it will be a fail.
