Question:

Are there some good models for teaching food shopping/cooking to underserved/marginalized populations? Example: those who are getting their food from the local food bank?

Answer:

I've visited so many local food banks and it just turns my stomach with they when they have those foods there. So yes, there are good modules. So what I do models, I, my answer was in the slip. Um, so I take it into modules. So when I'm teaching someone as a nutritionist, food coach, how to change their diet, I'm gonna ask them what they would like to focus on first. So let's take this as an example. Uh, Amy came to me and she is shopping at the local food bank and she's like, I, I really just want in focus on my family's fruit intake this this month. And so I will give her a list. It doesn't matter what fruit that she finds there, whether it's canned or frozen or fresh, I will say to her, if you can find something that doesn't have sugar in the canned fruit, great, and let's just start from where you are and adding a serving until you and your family members get up to two servings a day. And then I will work with her on, on cooking and preparing those fruit to match what her family's palate looks like and what their culture looks like. Do they like spicy? Do they want maybe some taco seasoning on their fruit salad? I had it for the first time when I went to San Antonio and I was like, what? Oh, so freaking good. So it was really getting to know that individual, what their, what their cooking habits are like. And we have a lot of forms in the Food Coach Academy to help you identify cooking skills, cooking habits, um, and all of that, what their current food intake looks like. So no matter where they're getting their food or where they start at, again, one small step at a time is how this, this all works.
