When using a convection oven, is it still necessary to rotate and/or move multiple pans (e.g. top to middle to bottom) trays?

Answer:

You know any oven the more you open the door? You're going to lose heat. So David has an important point there. You know, it depends on what you're baking and it depends on your particular oven. Convection mode is supposed to be the most even of all. I still rotate sometime because no matter what. Try the try the coconut test and you will see that there are some hot spots in your oven. So David, why don't you bake something and and do it with that rotating and see how that works out for you.
